Shashlik Russian meat skewers served

Shashlik (Russian Meat Skewers)

Shashlik, one of the most well-known dishes of Caucasian and Russian cuisine, has been a favorite in the region for centuries. The dish originates from the traditions of nomadic peoples who roasted meat on skewers over an open fire. Shashlik is usually prepared at barbecues, family celebrations, or gatherings with friends. The marinade gives a rich flavor to the meat, which is served with fresh vegetables and grilled side dishes to provide a complete dining experience.

    Preparation Steps

    1

Cut the pork into large, even cubes, approximately 4-5 cm in size.

    2

Slice the onions into thin rings, and crush the garlic.

    3

In a large bowl, combine the lemon juice, vegetable oil, Hungarian sweet paprika, ground black pepper, salt, and bay leaves. Add the meat, onions, and garlic. Mix thoroughly to coat all the meat pieces in the marinade.

    4

Cover the bowl and let the meat marinate in the refrigerator for at least 3-4 hours, or preferably overnight.

    5

Soak the wooden skewers in water for at least 30 minutes to prevent them from burning during grilling.

    6

Thread the marinated meat onto the skewers, alternating with onion rings to meld the flavors.

    7

Heat a grill or grill pan over medium-high heat. Grill the skewers for 4-5 minutes per side, until the meat is cooked through and nicely browned.

    8

Serve the Shashlik with fresh vegetables, grilled vegetables, or steamed rice.
