Prepare all the ingredients. Grate the sheep cheese, separate the eggs, and place the egg whites in a clean bowl.
Mix the egg yolks with the flour, salt, and a pinch of sugar.
Pour the milk into a saucepan and heat over medium heat until lukewarm, then pour it into the egg yolk mixture.
Stir the sheep cheese into the milky egg yolk mixture.
Whisk the egg whites until stiff peaks form, and gently fold them into the cheese mixture.
Butter the soufflé dish, then pour in the cheese mixture.
Bake in a preheated oven at 350°F (180°C) for 20-25 minutes, until the soufflé is nicely risen and golden brown.
Once done, let it cool slightly, then serve warm.
