In a bowl, combine the flour, baking powder, salt, sugar, and vanilla sugar.
In a separate bowl, whisk the eggs, then add the milk and melted butter. Whisk until smooth.
Pour the wet ingredients into the dry ingredients and mix until just combined, ensuring there are no lumps.
Heat a deep skillet or pot over medium heat. Add plenty of oil for deep-frying.
Pour a small amount of batter into the hot oil and fry until golden brown on both sides, about 2-3 minutes per side.
Remove the pancakes and place them on a paper towel-lined plate to drain excess oil.
Repeat the process with the remaining batter until all the pancakes are cooked.
Dust with powdered sugar and serve with jam or honey.
