Prick the fresh sausage with a toothpick or the tip of a fork to help the smoke and spices penetrate the meat better.
Preheat your smoker or grill to 230-250°F (110-120°C) and prepare your smoking wood for the desired aroma.
Place the sausages on the smoker rack and smoke for 2-3 hours, until the internal temperature reaches 165°F (75°C).
In a small saucepan, melt the butter, then add the BBQ sauce, chipotle powder, honey, and apple cider vinegar. Simmer over medium heat for 5 minutes, or until the sauce has thickened slightly.
When the sausages reach an internal temperature of 160°F (70°C), brush them with the chipotle sauce, then continue smoking for another 20 minutes to allow the flavors to meld.
Remove the sausages from the smoker and let them rest for at least 5 minutes, allowing the juices to redistribute evenly.
Slice the sausage and serve in fresh baguettes as sandwiches, with grilled vegetables, or baked potatoes.
