Prepare the vegetables: wash the lettuce leaves, and slice the tomatoes and red onion into thin rings.
Season the ground beef patties with salt and pepper on both sides. Preheat a skillet over medium heat and cook the patties for 3-4 minutes per side, until a golden brown crust forms.
When the patties are almost done, place a slice of smoked cheese on each and cover the skillet to let the cheese melt.
Toast the hamburger buns in a skillet or on a grill until the inside surfaces are golden brown and crispy.
Assemble the burgers: spread BBQ sauce on the bottom bun, top with lettuce leaves, the cheesy beef patty, and then the tomato and onion slices.
Add a little mayonnaise on top, then place the top bun on top. Gently press down to allow all the flavors to meld harmoniously.
