Knead the dough for 8-10 minutes until smooth and elastic. Cover and let rise for 1 hour, or until doubled in size.
Divide the risen dough into 8 equal portions. Roll each portion into a long rope, then shape them into pretzel shapes.
Bring 1 liter of water to a boil, then remove from heat and add the baking soda. Dip the pretzels into the baking soda solution for 30 seconds, then remove and place them on a baking sheet lined with parchment paper.
Grate the smoked cheese and sprinkle it evenly over the pretzels, ensuring the cheese is well distributed.
Bake the pretzels in a preheated oven at 400°F (200°C) for 15-18 minutes, or until golden brown and crispy. Serve fresh and enjoy!
