Slice or dice the smoked ham into thin pieces. Finely chop the onion.
Heat the olive oil in a skillet over medium heat. Sauté the onion until translucent.
Add the smoked ham and cook for a few minutes until it releases its flavor.
In a bowl, whisk the eggs with salt and pepper.
Pour the whisked eggs into the skillet with the ham. Cook over medium heat, stirring constantly, until the eggs are set but still creamy.
Before serving, sprinkle with fresh, chopped parsley and serve with fresh bread or toast.
