Wash and peel the potatoes. Cut them into cubes and boil in lightly salted water until tender, about 15 minutes.
While the potatoes are cooking, finely chop the onion and garlic. Heat the oil in a large skillet over medium heat and sauté the onion until translucent.
Add the diced smoked ham to the skillet. Sauté for 5-6 minutes, allowing the flavors to develop.
Add the garlic, bay leaves, and black pepper to the skillet. Sauté for another 2-3 minutes.
Once the potatoes are cooked, drain them well and add them to the ham mixture. Gently stir to combine, being careful not to mash the potatoes.
Serve the smoked ham and potatoes garnished with freshly chopped parsley. Serve with fresh bread.
