500 g All-purpose flour
1 tsp Salt
200 g Butter
150 g Sour cream
25 g Fresh yeast
1 tsp Sugar
100 ml Lukewarm milk
1 Egg
150 g Smoked ham
100 g Grated Cheese
1 Egg for brushing

    In the lukewarm milk, stir in the sugar, then crumble in the yeast. Let it stand for 10 minutes, until foamy.

    In a large bowl, sift the flour and add the salt. Rub in the cold butter until the mixture resembles breadcrumbs.

    Pour in the proofed yeast mixture, sour cream, and the whole egg. Knead the dough until it is smooth and elastic.

    Dice the smoked ham into small cubes, then mix it into the dough along with the grated cheese. Cover and let rise in a warm place for about 1 hour.

    On a lightly floured surface, roll out the dough to about ¾ inch (2 cm) thickness, then fold it over itself several times to create layers.

    Roll out the dough again to ¾ inch (2 cm) thickness, then use a round cookie cutter to cut out the scones. Place them on a baking sheet lined with parchment paper.
