Add the smoked ham slices to the skillet and cook for 2-3 minutes per side, until lightly crisped. Transfer to a plate.
Fry the eggs in the same skillet, leaving the yolks runny. Season with salt and pepper.
Serve the fried ham and eggs warm with fresh bread or toast. Sprinkle with chopped fresh parsley.
For a more intense flavor, you can cook the ham and eggs together in the same pan.
