Dice the smoked ham into small pieces. Finely chop the onion and garlic.
Heat the oil in a large skillet over medium heat. Sauté the onion until translucent. Add the garlic and cook for another 1-2 minutes, until fragrant.
Add the smoked ham to the skillet and sauté for 5-6 minutes, allowing it to release its flavors.
Meanwhile, bring the water to a boil and lightly salt it. Rinse the rice in cold water, then add it to the boiling water.
Cover the pot and simmer over low heat for 12-15 minutes, or until the water is completely absorbed. Let it rest covered for another 5 minutes.
Serve the steamed rice topped with the sautéed smoked ham and sprinkle with freshly chopped parsley. You can also serve it with a side salad or pickles.
