In a medium saucepan, heat the olive oil over medium heat and sauté the chopped onion for 2-3 minutes, until translucent.
Add the grated garlic and sauté for another 30 seconds, until fragrant.
Stir in the brown sugar, mustard, and apple cider vinegar. Cook for 2-3 minutes to allow the flavors to meld.
Add the tomato paste, Worcestershire sauce, smoked paprika, chili flakes, and chipotle pepper.
Pour in the water, stir well, and let it simmer over medium heat for 10-15 minutes, until the sauce thickens.
Taste and adjust the seasoning with salt, pepper, or extra honey if needed.
Let it cool slightly, then pour into a jar and serve with grilled meats, burgers, or roasted vegetables.
