Finely chop the chili peppers (remove seeds for a milder sauce), garlic, and ginger. Zest one lime, then juice both limes.
In a medium saucepan, heat the olive oil over medium heat. Add the chopped garlic and ginger and sauté for 1-2 minutes, or until fragrant.
Add the chili peppers and smoked paprika, and stir thoroughly to release their flavors.
Pour in the apple cider vinegar and lime juice, then stir in the lime zest. Add the honey and mix well to combine.
Simmer over low heat for 10-15 minutes, or until the sauce has slightly thickened and the flavors have melded together.
Season with salt to taste. For a smoother sauce, purée with an immersion blender. Serve with grilled meats, fish, or vegetables.
