Peel and finely grate the garlic. Also, zest the lime.
Heat the olive oil in a medium-sized saucepan over medium heat.
Add the grated garlic and sauté until fragrant, about 1 minute.
Pour in the honey, fresh lime juice, and Dijon mustard. Stir well to combine.
Add the smoked paprika, apple cider vinegar, and chili flakes. Simmer over low heat for 3-4 minutes.
Stir in the lime zest and cook for another 2 minutes to allow the flavors to meld.
Season with salt and freshly ground black pepper, then cook for 1 more minute.
Let it cool slightly, then serve with grilled meats, fish, or roasted vegetables.
