Start by simmering the smoked pork shoulder in boiling water for 30 minutes, allowing it to tenderize and become flavorful. While the pork is cooking, prepare the potatoes.
Peel and wash the potatoes, then dice them. Place the diced potatoes in a pot, cover them with water, and add a pinch of salt.
Bring the potatoes to a boil and cook until tender, about 15-20 minutes. Check for doneness with a fork; they should be easily pierced.
Remove the cooked pork shoulder from the water and slice it thinly. Keep warm until serving.
Drain the cooked potatoes, then add the butter and milk. Use a potato masher or an immersion blender to create a smooth puree. Season with salt and pepper to taste.
To serve, place a generous portion of mashed potatoes on a plate and arrange the sliced smoked pork shoulder alongside. Garnish with fresh, chopped parsley.
