Cut the smoked spareribs into pieces of your desired size. Place the meat in a large pot and add enough water to cover.
Add the peeled and halved onions, garlic cloves, bay leaves, and black peppercorns. Bring to a boil, then reduce heat and simmer for 1.5-2 hours, or until the meat is tender.
Meanwhile, prepare the mashed potatoes: peel the potatoes, cut them into smaller pieces, and boil in salted water until tender, about 20 minutes.
Drain the cooked potatoes, then mash them with a potato masher. Add the butter and warm milk, and mix until smooth and creamy. Season with salt and pepper to taste.
When the smoked spareribs are tender, remove them from the cooking liquid. In a skillet, sear on both sides until golden brown and crispy.
Serve the crispy smoked spareribs with the creamy mashed potatoes, and offer pickles or fresh vegetables on the side, if desired.
