500 g All-purpose flour
50 g Sugar
1 pinch Salt
25 g Fresh yeast
300 ml Lukewarm milk
2 Eggs
50 g Butter
1 tsp Vanilla extract
1 tsp Lemon zest (grated)
1 Apple (optional)
750 ml Oil (for frying)
50 g Powdered sugar (for dusting)

    In a small bowl, combine the yeast with a little lukewarm milk and a teaspoon of sugar. Let it stand for 5-10 minutes, until foamy.

    In a large mixing bowl, sift together the flour, sugar, salt, lemon zest, and vanilla extract.

    Make a well in the center of the flour mixture, and pour in the yeast mixture, eggs, and the remaining lukewarm milk. Mix with a wooden spoon.

    Add the melted butter and knead the dough for 5-10 minutes, until smooth. If you want to add apple, add the finely diced apple now.

    Cover the dough and let it rise in a warm place for 1 hour, or until doubled in size.

    In a deep saucepan or fryer, heat the oil to 340-355°F (170-180°C). The oil is ready when a small piece of dough slowly browns in it.

    Using a spoon or ice cream scoop, form small balls of dough and carefully drop them into the hot oil.

    Fry the smoutebollen until golden brown, about 3-4 minutes, turning them occasionally to ensure even browning.
