Separate the eggs. Whisk the egg whites until stiff peaks form. In a separate bowl, cream the egg yolks with the sugar until pale and fluffy.
Gently fold in the flour and then the beaten egg whites. Bake three sponge cakes: one plain, one with walnuts, and one with cocoa powder.
Prepare a vanilla custard by combining the milk, sugar, and vanilla sugar in a saucepan and cooking until thickened. Let it cool completely.
Melt the dark chocolate and mix with a little milk to create a chocolate sauce.
Layer the sponge cakes with the vanilla custard. Drizzle with the chocolate sauce. Sprinkle with ground walnuts and rum.
