Pour the wet ingredients into the dry ingredients, and mix until you have a smooth batter. Stir in the grated Manchego cheese and chopped chorizo.
Preheat your waffle iron, then pour in a portion of the batter. Cook for 3-5 minutes, or until golden brown.
Sprinkle the finished waffles with fresh parsley and a little extra Manchego cheese on top.
Serve fresh, optionally with extra fried chorizo and smoked paprika for a more intense flavor.
