Thoroughly wash the strawberries, remove the green tops, and cut them into smaller pieces.
In a blender, purée the strawberries with sugar and lemon juice until smooth.
In a medium bowl, combine the heavy cream, vanilla extract, and sparkling wine with the strawberry mixture. Mix well.
Pour the mixture into a sealable container and refrigerate for at least 3 hours to chill thoroughly.
If you have an ice cream maker, pour the chilled mixture into it and prepare the ice cream according to the manufacturer's instructions. If you don't have an ice cream maker, freeze for 4-5 hours, stirring thoroughly every hour to prevent ice crystals from forming.
