150 g Butter
150 g Sour Cream
1 Egg
25 g Yeast
100 ml Lukewarm Milk
1 tsp Salt
1 tsp Sugar
1 Egg for glazing

    Activate the yeast: in lukewarm milk, stir in the sugar and yeast, then let it sit for 10 minutes until foamy.

    In a large bowl, combine the spelt flour and salt, then rub in the butter with your fingertips until the mixture resembles coarse crumbs.

    Add the sour cream, egg, and activated yeast mixture, then knead the dough thoroughly until it comes together.

    On a lightly floured surface, roll out the dough to about ¾ inch (2 cm) thickness, then fold it in thirds three times to create layers.

    Cover with a kitchen towel and let it rest for 30 minutes to rise slightly.

    Roll out the dough again to about ¾ inch (2 cm) thickness, then use a round cutter to cut out the scones.

    Place the scones on a baking sheet lined with parchment paper and brush the tops with beaten egg.
