Thoroughly wash the orange, then slice it into thin rounds. Place the cherries (thawed if frozen) in a large mixing bowl.
Pour the cherry juice, red wine, and orange juice into the mixing bowl. Stir to combine, then add the orange slices, cinnamon stick, and cloves.
Add honey to taste, then stir well until the honey is completely dissolved.
Cover the bowl and refrigerate for at least 2 hours to allow the flavors to meld. For a more intense spiced flavor, let it stand overnight.
Before serving, remove the cinnamon stick and cloves, then pour in the well-chilled sparkling mineral water. Stir gently.
Pour the punch into glasses, add ice cubes, and garnish with cherries or orange zest. Serve immediately!
