Pour the apple juice and orange juice into a medium saucepan.
Slice the lemon into thin rounds and add them to the juice.
Add the cloves, cinnamon stick, star anise, and grated ginger to the saucepan.
Pour in 250 ml of water, then begin to heat over medium heat.
Add two tablespoons of honey and stir well until dissolved.
Gently heat for 10-15 minutes, but do not boil, allowing the spices to infuse their flavors.
Remove from the heat and let stand for a few minutes to allow the flavors to meld further.
Strain the punch into a pitcher or mugs and serve hot.
Garnish with a fresh lemon slice or a cinnamon stick in each glass.
