In a medium saucepan, combine the apple juice and orange juice. Heat over medium heat until warm.
Add the cinnamon stick, cloves, nutmeg, and grated ginger. Stir gently while continuing to heat.
Pour in the hot water, then stir in the honey and vanilla extract. Reduce heat to low and let it simmer gently, without boiling, to allow the flavors to meld.
Let the drink simmer gently for 10-15 minutes, stirring occasionally, to fully infuse the spices.
Strain the drink to remove the cinnamon stick and cloves. Pour into heatproof glasses or mugs.
Garnish each glass with a slice of lemon for freshness.
