Wash the oranges and slice them thinly. Tip: Use a sharp knife to ensure even slices.
In a medium saucepan, pour in the apple cider. Add the honey, cinnamon stick, and cloves. Stir until the honey is completely dissolved.
Add the orange slices to the saucepan and gently heat the cider over medium heat. Tip: Do not boil, to preserve the fresh flavor and color of the oranges.
Add 2 tablespoons of freshly squeezed lemon juice, which will provide a subtle tartness and enhance the orange flavor.
Stir the cider well and let it sit for 5 minutes off the heat to allow the flavors to meld.
Strain the cider before serving, reserving some orange slices to use as garnish in the glasses. Garnish with fresh mint.
