500 g Fresh Kiwi
250 ml White Wine Vinegar
250 ml Water
50 g Honey
30 g Brown Sugar
15 g Salt
1 db Cinnamon Stick
3 db Cloves
2 db Bay Leaves
10 szem Black Peppercorns
1 tsp Mustard Seeds
1 tsp Red Pepper Flakes

    Peel the kiwis and slice them into rounds or smaller pieces.

    Select a clean canning jar and place the kiwi slices inside.

    In a saucepan, bring to a boil the water, white wine vinegar, honey, brown sugar, salt, cinnamon stick, cloves, bay leaves, black peppercorns, mustard seeds, and red pepper flakes.

    Once the brine has come to a boil, let it cool slightly, so it's not too hot when poured over the kiwi.

    Pour the cooled brine over the kiwi, making sure it is completely submerged.

    Seal the jar and let it rest in the refrigerator for at least 24 hours, but the longer it sits, the more flavorful it will become.
