Thoroughly wash the plums, halve them, remove the pits, and slice thinly. Tip: Fresh, ripe plums are easy to slice and impart an intense flavor to the drink.
In a medium-sized saucepan, pour the apple cider, add the honey, cinnamon stick, and cloves. Stir until the honey is completely dissolved.
Add the plum slices to the saucepan and warm the cider over medium heat. Tip: Do not boil, to preserve the plum flavor.
Add 2 tablespoons of freshly squeezed lemon juice, which perfectly balances the sweetness and acidity of the drink.
Stir the cider well and let it stand for 5 minutes off the heat, allowing the flavors to meld.
Before serving, strain the cider, and arrange the plum slices in the glasses as a decoration. Garnish with fresh rosemary.
