Finely chop the onion and garlic.
In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
Add the garlic, cumin, turmeric, and cinnamon. Stir well and cook for another minute until fragrant.
Add the rinsed rice to the saucepan and stir thoroughly to coat it with the spiced onion mixture. Let it toast for 1-2 minutes, allowing the rice to absorb the oil and flavors.
Pour in the water and stir. Add salt and black pepper. Cover the saucepan and simmer over low heat for about 15 minutes, or until the rice is tender and has absorbed all the liquid.
Remove from the heat and let it rest, covered, for 5 minutes. This helps the rice achieve perfect texture.
Before serving, sprinkle with toasted almonds and fresh chopped parsley. Serve warm as a standalone dish or as a side dish.
