Slice the jalapeño peppers into rings. Prepare the vegetables: wash the lettuce leaves, and slice the tomatoes and red onion into thin rings.
Season the beef patties with salt and pepper on both sides. Preheat a skillet over medium heat and cook the patties for 3-4 minutes per side, until a golden-brown crust forms.
When the patties are almost cooked through, place a slice of cheddar cheese on top of each and cover the skillet, allowing the cheese to melt.
Toast the hamburger buns in a skillet or on a grill until the insides are golden brown and crispy.
Assemble the burgers: spread chipotle sauce on the bottom bun, then add the lettuce leaves, cheesy beef patty, jalapeño rings, tomatoes, and red onion.
Add an extra dollop of chipotle sauce on top if you like things extra spicy, then place the top bun on top.
Serve immediately with french fries or grilled vegetables, and enjoy the fiery flavors of this burger!
