Peel and finely grate the ginger and garlic.
In a medium saucepan, heat the ketchup over medium heat. Add the grated ginger and garlic, and cook for 2-3 minutes, until fragrant.
Pour in the tequila, then stir in the brown sugar, apple cider vinegar, Worcestershire sauce, and hot pepper sauce.
Stir in the smoked paprika, salt, and pepper. Simmer over low heat for 10-15 minutes, or until the sauce has thickened.
For a smoother sauce, blend with an immersion blender. Let cool, then serve with grilled meats or vegetables.
