Slice the jalapeño peppers into thin rounds. Heat olive oil in a skillet over medium heat and sauté the jalapeño slices for 2-3 minutes to enhance their spicy flavor.
Prepare the vegetables: wash the lettuce leaves, and slice the tomato and red onion into thin rounds.
Season the beef patties with salt and black pepper on both sides. Preheat a skillet to medium heat and cook the patties for 3-4 minutes per side, until a golden-brown crust forms.
When the patties are almost cooked through, place a slice of cheddar cheese on top of each and cover the skillet to allow the cheese to melt.
Toast the hamburger buns in a skillet or on a grill until the insides are golden-brown and crispy.
Assemble the burgers: spread mayonnaise on the bottom bun, top with lettuce leaves, the cheesy beef patty, sautéed jalapeño slices, and tomato and onion slices. Add a dash of hot sauce to taste.
Place the top bun on and gently press down. Serve immediately with French fries or corn salad.
