Mince the garlic and ginger very finely.
In a medium saucepan, combine the peanut butter, soy sauce, lime juice, and honey.
Add the minced garlic, ginger, and chili flakes, then mix well to combine.
Pour in the coconut milk and water, and whisk until smooth.
Place the saucepan over medium heat and warm gently, stirring constantly to prevent the sauce from clumping.
Cook for 5-7 minutes, or until the sauce has thickened and the flavors have melded together.
If the sauce becomes too thick, add a little more water and stir until smooth.
Remove from heat and let cool for a few minutes. Serve with meats, noodles, or fresh vegetables.
