Peel the kiwis and slice them into rounds or smaller pieces.
Select a clean mason jar and place the kiwi slices inside.
In a saucepan, bring the water, vinegar, brown sugar, salt, cinnamon stick, cloves, bay leaves, black peppercorns, and chili flakes to a boil.
Finely chop the hot pepper and add it to the pickling liquid. Simmer for 5 minutes to allow the flavors to meld.
Once the pickling liquid has come to a boil, let it cool slightly so it's not too hot when poured over the kiwi.
Pour the lukewarm pickling liquid over the kiwi, ensuring it's completely submerged.
Seal the jar and refrigerate for at least 24 hours. The longer it sits, the more flavorful it will become.
Before serving, let it stand at room temperature for 10 minutes to allow the flavors to fully develop.
