300 g Fresh Mussels
200 ml White Wine Vinegar
200 ml Water
50 g Brown Sugar
1 tsp Salt
2 cloves Garlic
2 Bay Leaves
2 tsp Chili Flakes
1 tsp Black Peppercorns
50 ml Lemon Juice

    Clean the mussels: scrub the shells thoroughly and remove any sand or debris.

    Bring a pot of water to a boil, then add the mussels. Cook for 3-5 minutes, or until the shells open. Discard any mussels that do not open.

    Drain the mussels and carefully remove the mussel meat from the shells. Rinse with cold water.

    In another saucepan, combine the white wine vinegar, water, brown sugar, and salt. Heat over medium heat until the sugar is completely dissolved.

    Add the garlic cloves, bay leaves, chili flakes, black peppercorns, and lemon juice. Simmer over low heat for 3 minutes to allow the flavors to meld.

    Place the cooked mussel meat into sterilized jars, then pour the hot, spicy pickling liquid over them.

    Seal the jars and let them cool to room temperature. Then, refrigerate for at least 12 hours to allow the flavors to develop.
