    Preparation Steps

    1

Peel the pineapple and cut it into smaller pieces or slices.

    2

Choose a clean canning jar and place the pineapple pieces inside.

    3

In a saucepan, bring to a boil the water, white wine vinegar, brown sugar, salt, cinnamon stick, cloves, bay leaves, black peppercorns, and chili flakes.

    4

Finely chop the hot pepper and add it to the pickling liquid. Simmer for 5 minutes to allow the flavors to meld.

    5

Once the pickling liquid has boiled, let it cool slightly so it's not too hot when you pour it over the pineapple.

    6

Pour the slightly cooled pickling liquid over the pineapple, making sure it's completely submerged.

    7

Seal the jar and let it sit in the refrigerator for at least 24 hours, but the longer it sits, the more flavorful it will become.

    8

Before serving, let it stand at room temperature for 10 minutes to allow the flavors to fully develop.
