500 g Fresh squid
1 l Water
250 ml White vinegar
30 g Salt
20 g Brown sugar
3 cloves Garlic
1 Red onion
2 db Bay leaves
1 tsp Black peppercorns
1 tsp Mustard seeds
1 tbsp Fresh dill
2 db Chili peppers (fresh or dried)
1 tsp Caraway seeds
1 tsp Coriander seeds
50 ml Lemon juice

    Preparation Steps

    Thoroughly clean the squid: remove the innards, head, and skin, then cut into rings.

    Bring a pot of water to a boil and cook the squid rings for 1-2 minutes, until just tender. Drain and let cool.

    In a sterilized jar, layer the squid rings with thinly sliced red onion, garlic cloves, and finely chopped chili peppers.

    In a saucepan, bring to a boil the vinegar, water, brown sugar, salt, bay leaves, black peppercorns, mustard seeds, caraway seeds, coriander seeds, and dill. Let cool to room temperature.

    Pour the cooled brine over the squid rings, then add freshly squeezed lemon juice for extra flavor.

    Seal the jar and refrigerate for at least 24 hours to allow the flavors to meld.
