Clean the pork ribs, cut them into larger pieces, and rub them generously with salt and pepper.
Prepare the spicy marinade: In a bowl, whisk together the olive oil, minced garlic, mustard, Hungarian sweet paprika, rosemary, ground caraway seeds, brown sugar, and apple cider vinegar. Thoroughly coat the ribs with this mixture.
Place the ribs in a deep baking dish, cover tightly with aluminum foil, and let them marinate for at least 2 hours, or preferably overnight in the refrigerator.
Preheat your oven to 350°F (180°C). Bake the ribs covered with foil for 1 hour, until tender.
Remove the foil, increase the oven temperature to 400°F (200°C), and bake for another 20-30 minutes, or until the ribs are beautifully golden brown and crispy.
Serve the spicy roasted pork ribs warm, with fresh bread, roasted potatoes, or a fresh salad. Offer mustard or barbecue sauce on the side, if desired.
