In a small saucepan, combine the tamarind paste and water. Heat over medium heat.
Add the brown sugar, red pepper flakes, grated garlic, and ginger. Stir to combine.
Pour in the soy sauce and simmer over low heat for 10-12 minutes, or until the sauce has thickened.
Remove from heat and stir in the chopped fresh cilantro.
Serve with grilled meats, spring rolls, or roasted vegetables.
