Spicy Thyme Infused Vinegar

Spicy thyme infused vinegar is an exciting and refreshing condiment inspired by Mediterranean cuisine. Thyme is often used in vinegar pickles because its freshness and vibrant flavor highlight the spicy and sweet components. In this recipe, chili and garlic add a touch of extra intensity to the flavors. This pickle is excellent with grilled meats, roasted vegetables, and even refreshing drinks. For best results, let it rest for at least one day in the refrigerator to allow the flavors to meld, creating a truly rich, spicy flavor experience!

    Preparation Steps

    1

Thoroughly rinse the fresh thyme sprigs under cold water, then drain well to remove excess water.

    2

Finely chop the fresh chili pepper. Peel the garlic clove and cut it in half.

    3

In a small saucepan, combine the white wine vinegar, water, honey, and salt. Heat over medium heat, stirring until the honey and salt are completely dissolved.

    4

Lightly crush the whole black peppercorns with the flat side of a knife to release their flavor.

    5

Place the thyme sprigs in a clean, sealable jar. Add the garlic, crushed peppercorns, chopped chili pepper, and chili flakes.

    6

Pour the hot vinegar mixture over the thyme, gently pressing down with a spoon to ensure the thyme is fully submerged.

    7

Let the jar cool to room temperature for about 30 minutes, then seal it and refrigerate for at least 24 hours to allow the flavors to meld.

    8

Use the spicy thyme infused vinegar to enhance grilled meats, salads, or refreshing drinks. It will keep in the refrigerator for 2-3 weeks.
