Combine the ground beef with salt and pepper. Gently form into 4 equal-sized patties. TIP: Keep the meat cold to help retain its moisture during cooking.
Heat a grill pan or skillet over medium-high heat. Cook the patties for 3-4 minutes per side, or until golden brown and cooked through.
In a separate pan, heat the olive oil over medium heat. Sauté the garlic until fragrant. Add the spinach and cook for 1-2 minutes, or until wilted. TIP: Don't overcook the spinach; it should retain its vibrant green color.
Toast the cut sides of the hamburger buns on the grill pan or in a toaster.
Prepare the vegetables: Slice the tomatoes and red onion, and wash the lettuce leaves.
Assemble the burgers: Place lettuce on the bottom bun, followed by the goat cheese topped beef patty, sautéed spinach, tomato slices, and red onion. Top with the other half of the bun.
Serve immediately with freshly made sweet potato fries or a green salad. TIP: For extra flavor, place the goat cheese on the patty just before it's done cooking, allowing it to melt slightly.
