Blanch the spinach in boiling water for 1-2 minutes. Drain well and squeeze out any excess water.
Rinse the chickpeas and mash them in a bowl using an immersion blender or a fork.
Finely chop the onion and garlic. Sauté in one tablespoon of olive oil over medium heat for 5 minutes, until softened.
Add the sautéed onion and garlic to the mashed chickpeas, then mix in the chopped spinach.
Crumble in the feta cheese, then add the oatmeal, breadcrumbs, spices, and chopped parsley.
Mix the mixture thoroughly, then form into 4 equally sized patties. If the mixture is too soft, add a little extra breadcrumbs.
Place the patties on a tray and let them rest in the refrigerator for 30 minutes to firm up.
Heat one tablespoon of olive oil in a skillet over medium heat. Cook the patties for 4-5 minutes per side, until golden brown.
Toast the hamburger buns in a dry skillet or oven.
Assemble the burger: Place a lettuce leaf on the bottom half of the toasted bun, top with the spinach patty, a slice of tomato, mustard, and ketchup.
Place the top bun on and serve immediately with a fresh salad or fries.
