Finely chop the onion and garlic and sauté in olive oil until softened.
Add the washed spinach, season with salt and pepper, and cook for a few minutes until wilted.
Combine the spinach with the ricotta cheese and set aside.
Melt the butter, add the flour, and gradually whisk in the milk until smooth. Season with salt, pepper, and nutmeg to create a béchamel sauce.
Grease a baking dish with olive oil. Layer the lasagna sheets, spinach and ricotta mixture, béchamel sauce, and grated Parmesan cheese.
