Rinse the rice thoroughly under cold water to remove excess starch. This helps the rice stay fluffy.
Finely chop the onion, garlic, and parsley. Thoroughly wash the spinach and roughly chop it.
In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
Add the garlic and stir for another minute until fragrant.
Add the spinach to the saucepan and cook for 2-3 minutes, until it wilts and releases its moisture.
Add the rice to the saucepan and mix with the spinach and spices. Sauté for 1-2 minutes to allow the flavors to meld.
Pour in the water and add salt and black pepper. Stir once, then cover and simmer over low heat for 15 minutes, or until the rice has absorbed the liquid.
Turn off the heat and let the rice rest, covered, for another 10 minutes. This helps achieve the perfect texture.
Drizzle the finished rice with freshly squeezed lemon juice and sprinkle with fresh parsley. Gently mix before serving.
