Preheat your oven to 350°F (180°C). Line a large baking sheet with parchment paper.
In a large bowl, whisk the eggs and sugar together until light and fluffy. Use an electric mixer and beat for at least 5 minutes, until the mixture becomes pale and airy.
Sift the flour and baking powder into the egg mixture. Gently fold together with a spatula, being careful not to deflate the batter.
Add the vanilla extract and gently mix to combine.
Pour the batter into the prepared baking sheet and spread evenly. Bake for 10-12 minutes, until the sponge cake is golden brown and springs back to the touch.
While the sponge cake is baking, lay out a clean kitchen towel and dust it generously with powdered sugar. This will prevent the cake from sticking.
Remove the sponge cake from the oven and immediately invert it onto the sugared kitchen towel. Peel off the parchment paper, then while still warm, roll up the cake tightly in the towel. Let it cool completely in the towel.
Once the cake has cooled, gently unroll it and spread evenly with jam. Then, carefully roll it back up.
Dust the top with powdered sugar and slice before serving.
