Prepare the ingredients: shred or julienne the vegetables, and soak the rice noodles if using. TIP: Make sure the vegetables are of uniform length for easier rolling.
Fill a bowl with warm water and soak the rice paper wrappers one at a time for a few seconds until they become pliable. TIP: Do not soak for too long, or the paper will tear.
Lay the rice paper wrapper on a clean surface and place a leaf (chard or lettuce) on top. Then, add the vegetables, cilantro, and rice noodles (if using). TIP: Do not overfill so that they are easy to roll.
Fold in the bottom and top edges of the rice paper, then roll up the roll tightly. Repeat with the remaining rice paper wrappers.
Serve the rolls with soy sauce and fish sauce (or vegan alternative) for dipping. Garnish with sesame seeds, if desired. TIP: Serve fresh to prevent the rice paper from drying out.
