Finely chop or grind the fresh beef. Ensure the beef is of high quality and freshly purchased.
In a large bowl, combine the ground beef with the egg yolks, finely chopped red onion, capers, Dijon mustard, Worcestershire sauce, salt, and pepper.
Add a drizzle of olive oil and the finely chopped fresh parsley. Mix thoroughly until the mixture is homogenous.
Shape the mixture into small portions and place them on plates. Create a slight indentation in the center of each portion to hold the egg yolk.
When serving, place a fresh egg yolk on top of each tartare and serve with toasted bread.
Garnish with extra fresh parsley or capers and serve immediately to ensure the flavors remain fresh.
