Prepare the Brussels sprouts: trim the ends, remove any outer leaves, and halve them. This will help them to cook evenly and faster.
Heat olive oil in a skillet over medium heat. Add the halved Brussels sprouts, cut-side down. Sear for 6-8 minutes, until nicely browned and caramelized.
Once the Brussels sprouts are seared, add the minced garlic clove, soy sauce, and sesame oil. Stir to combine and cook for another 2-3 minutes, allowing the flavors to meld together.
Meanwhile, prepare the bao buns: steam them in a bamboo or metal steamer for about 5 minutes, until soft and heated through. Tip: use parchment paper during steaming to prevent sticking!
Once everything is ready, carefully open the bao buns and fill them with the stir-fried Brussels sprouts. Make sure the filling isn't too hot, making it easier to handle and preventing the dough from becoming soggy.
Serve the bao buns immediately, while fresh. Tip: for an extra crispy touch, you can pan-fry the filled buns for a few minutes, but they are perfect as they are!
