Freshly baked German Stollen Christmas cake

Stollen - German Christmas Cake

Stollen is a traditional German Christmas cake baked for festive occasions for centuries. The first Stollen recipes date back to the 15th century, and since then, it has become one of Germany's most famous holiday cakes. The cake's rich, spicy flavor is given by the raisins, almonds, and candied citrus peel, while the powdered sugar-covered dough evokes snowy landscapes. Traditionally, it is left to mature for a few days to allow the flavors to blend even better, but it is also extremely tasty when fresh.

    Preparation Steps

    1

In a small bowl, combine lukewarm milk, yeast, and one tablespoon of sugar. Let stand for 10 minutes, until foamy.

    2

In a large bowl, whisk together flour, remaining sugar, salt, cinnamon, and vanilla extract.

    3

Add the yeast mixture, beaten egg, and melted butter to the flour mixture. Mix and knead until a soft, elastic dough forms.

    4

Knead in the raisins, candied citrus peel, and chopped almonds into the dough.

    5

Cover with a kitchen towel and let rise in a warm place for about 1.5 hours, or until doubled in size.

    6

Divide the risen dough into two equal portions and shape them into oblongs.

    7

Place the dough on a baking sheet lined with parchment paper and let rise for another 30 minutes. Meanwhile, preheat the oven to 350°F (180°C).

    8

Bake the stollens for 35-40 minutes, or until golden brown.

    9

Let cool slightly, then dust generously with powdered sugar to achieve the authentic white coating.

    10

Cool completely, slice, and serve as a festive treat.
