In a small bowl, combine lukewarm milk, yeast, and one tablespoon of sugar. Let stand for 10 minutes, until foamy.
In a large bowl, whisk together flour, remaining sugar, salt, cinnamon, and vanilla extract.
Add the yeast mixture, beaten egg, and melted butter to the flour mixture. Mix and knead until a soft, elastic dough forms.
Knead in the raisins, candied citrus peel, and chopped almonds into the dough.
Cover with a kitchen towel and let rise in a warm place for about 1.5 hours, or until doubled in size.
Divide the risen dough into two equal portions and shape them into oblongs.
Place the dough on a baking sheet lined with parchment paper and let rise for another 30 minutes. Meanwhile, preheat the oven to 350°F (180°C).
Bake the stollens for 35-40 minutes, or until golden brown.
Let cool slightly, then dust generously with powdered sugar to achieve the authentic white coating.
Cool completely, slice, and serve as a festive treat.
