Wash the strawberries and basil leaves. Chop the strawberries into smaller pieces to help them release their flavor.
In a large pitcher, combine the non-alcoholic apple cider and lemon juice. Add the chopped strawberries and gently muddle them with a spoon to release their juices.
Add the honey and stir until completely dissolved. Tip: Use room temperature honey for easier dissolving.
Place the basil leaves into the pitcher. Gently stir to infuse the flavor without bruising or tearing the leaves.
Pour in the sparkling mineral water and stir gently to combine. Be careful not to lose the carbonation.
When serving, add ice cubes to each glass and pour in the prepared cider. Garnish the glasses with fresh strawberries and basil leaves.
