Stuffed tomatoes are a truly fresh and summery dish, made using seasonal vegetables. The tomatoes are hollowed out and filled with a rich filling, usually ground meat, rice, and spices, and then baked in the oven. Stuffed tomatoes wonderfully combine the flavor of fresh tomatoes with a rich and flavorful filling.
This dish is especially popular in Mediterranean cuisines, but it also has a great tradition in many families in Hungary. Stuffed tomatoes are a perfect choice for a summer meal, as they are a light yet nutritious dish. The recipe celebrates the combination of local flavors and fresh vegetables and is guaranteed to be a good fit for every meal.
Cut off the tops of the tomatoes and carefully scoop out the insides, being careful not to damage the skins.
Cook the rice in salted water until tender. Then, mix it with the finely chopped garlic, olive oil, parsley, salt, and pepper.
Fill the tomatoes with the rice mixture and sprinkle the tops with grated cheese.
Place the stuffed tomatoes in a baking dish and bake in a preheated oven at 350°F (180°C) for about 20 minutes, or until the cheese is golden brown.
